Banana in Coconut Milk: Kluay Buad Chee

Vegetarian Recipe

Preparation Time: 5 minutes

Cook Time: 10 minutes

Serving: 2 persons

Ingredients: 6 ripe bananas (Lady Finger bananas) or 3 typical bananas peeled and cut into 2 inch length and 4 slices, 1 cup of coconut milk, 3/4 cup of water, 1/2 cup of sugar, 1/4 tsp of salt.

*Note: The bananas you select should not be too ripe, just barely, so that they are firm and hold a better shape and

Procedure: Put coconut milk, sugar and water into a small or medium sized pot and boil on medium heat. Then reduce and simmer, stirring until the sugar has dissolved. Add the banana and salt; bring to simmer again and cook for 4 minutes, or until the banana is soft (lady finger bananas cook longer), then remove from heat. Serve in individual bowls, let cool.
